In the absence of oxygen, glucose is converted into lactic acid (in animals) or ethanol and carbon dioxide (in yeast) through fermentation.

During lactic acid fermentation, glucose is first broken down into pyruvate through glycolysis. In the absence of oxygen, pyruvate is then converted into lactic acid to regenerate NAD⁺, allowing glycolysis to continue producing ATP.
